Asian Noodles {Farmer’s Market Finds} – Kids Cook Monday

On Brady’s last day of school, Nolan and I enjoyed our last little bit of one on one time together by heading downtown. We spent the morning exploring the Science Museum and hitting up the Farmer’s Market again.

Sometimes I have an ingredient in mind that I’m searching for when I go to a market, and other times I just go see what looks good and come up with a meal based around what I’ve found. This week I spotted some snow peas that looked tasty and decided to make some yummy Asian noodles- kind of a spin on Lo Mein.

Brady helped me get our Snow Peas prepped for our Asian Noodles. He washed them up and then snapped the ends off each one (tasting a few along the way.) Even Nolan wanted to test them out! Slowly but surely I am getting that kid to try healthy foods…

Here’s how we made our “Asian Noodles.”

Ingredients:

1/2 box Spaghetti Noodles (we used whole wheat)
2 cups Snow Peas
1 cup shredded carrots
1 clove of garlic (chopped)
2 cups sliced mushrooms
1/2 Scallions
1 Tb. Sesame Oil
3 Tb. Low Sodium Soy Sauce
Salt, Pepper, and Red Pepper Flakes(optional) to taste

Steps:

1. Bring a pot of water to a boil. Salt liberally and cook noodles until they’re just tender.
2. In a large pan, begin to sautee mushrooms and garlic in olive oil for a few minutes.
3. Add carrots and snow peas to the pan. Season with salt and pepper and red pepper flakes if you would like it a little spicy.
4. Drain noodles and add to veggie pan (once veggies are tender).
5. Add Sesame oil and Soy sauce to the large pan.
6. Toss all together with thinly sliced scallions.

You can always add a little more soy sauce if it seems to need it, so I recommend putting it in slowly and taste testing as you go. (You can’t take it out once it’s in!) Another option is to use Chili Oil in place of Sesame Oil if you (and your kiddos) can handle a little more heat.

We love this meal because you can use just about any vegetable you have on hand. The snow peas worked great because they were just a little sweet to help balance the salt of the soy sauce. And the scallions (also a market find!) brighten the whole the dish up.

Another perk of this meal, is that you can totally eat it cold too. It makes for a tasty side dish or can be substantial enough to be a meal!

 

 

 

 

 

 

Farmer’s Market Inspiration!

I’m loving this Spring weather! We have had some gorgeous days with perfect temperatures and today was one of the best. Nolan and I took the opportunity to go downtown and check out the Raleigh Farmer’s Market. It just started back up recently and I couldn’t wait to get back down there to see what was new this year, eat some tasty food and let Nolan jam out to the music. (I should note that he also really enjoys the free samples.)

They close off a portion of Fayetteville St. and set up right between the buildings.

Our Farmer’s Market finds!

We decided to use some of our market goodies to make a snack. We also used some of our herbs we’ve been growing to make these yummy “Scallion and Herb Cream Cheese Cucumber Sandwiches.”

Brady helped cut up our scallions from the market while I chopped up some basil, thyme, and parsley. We mixed them all in a bowl of softened cream cheese and a little lemon zest and salt.

Here’s our bowl of creamy goodness!

We spread the Scallion Cream Cheese mixture onto some slices of our market baguette and topped each one with a thin slice of cucumber.

These were so light and refreshing. They’d make a delicious appetizer or finger food for a party.

The fact that some of our ingredients came straight from local farmers and bakers, made this snack that much tastier!

Strawberry Yogurt Pops- Kids Cook Monday

It’s strawberry season here in Raleigh! Recently we went to a farm by our house to pick a whole ton of strawberries (and there may have been some tasting along the way.)

We enjoyed our strawberries on strawberry shortcakes made with lemon poundcake (yum!), and smoothies, and just eating them plain, but I decided to use some for our first attempt at homemade popsicles. One of my besties, Lindsay, sent Nolan a popsicle kit for his birthday recently, so this was the perfect time to try it out.

These were extremely simple to make and with 4 basic ingredients they were a much healthier alternative to store bought pops. Brady did most of the work for this recipe. Here’s how it went down…

Ingedients:
About 2 Cups of Fresh Strawberries
1 container of Greek Yogurt (we used Vanilla)
About 1 Tbs. lemon juice
About 1/4 to 1/3 cup of honey (sweeten to taste)

Steps:

Add strawberries, yogurt, lemon juice, and honey to blender. Blend until completely smooth. Taste test- Add more honey if needed.

Pour fruit mixture into your popsicle mold. Set in freezer for at least 4 hours.

Use a little warm water to loosen the popsicles out of the molds, and then enjoy! The boys sure did.

Mommy/Smith Boys weekend

This past weekend my hubby went back home to Texas to visit some old friends and family. It was a much needed trip, but unfortunately it came on the heels of him being away for work, so me and my little guys had a real nice stretch of quality time without daddy. And by that I mean, I had to get pretty creative to come up with fun stuff to entertain them so they wouldn’t spend all weekend looking at me saying, “When’s Daddy coming home?”

As a teacher, I loved lesson planning, so I was up for the challenge of planning some engaging activities that went beyond watching Paw Patrol and playing in our front yard. I’m not saying we didn’t do that too, but it was a long week/weekend so I needed more in my arsenal. Here’s how we spent our time…

Friday was a rainy day, so we spent it trying out a new game, playing with shaving cream, and going to the mall.

On Saturday, we had gorgeous weather. It was the perfect day to check out the Museum of Life Science in Durham. Or as I now like to call it, the Disney World of Durham. Good gosh, this place was amazing for kids. We were there all day and could have stayed longer! Thank you, thank you, thank you, to whoever created this place.

Then we went to the airport to watch the planes take off and land, and of course, pick up Chris!

And blissfully, Chris will be working from home ALL week this week. Woohoo!

I loved my one on one time with my boys, but it always feels better when our foursome is back together!

Earth Day- Kids Cook Monday

This Wednesday, April 22nd, is Earth Day. I recently saw a post from the website, http://www.produceforkids.com  about some easy ways to celebrate this special day with little ones. I will admit, I was expecting a list of complicated tasks that inevitably would include a Pinterest-y type project…although I’m not exactly sure how that would help our Earth. Anyways, I was pleasantly surprised to see the list was so do-able, and that we (and probably you too!) love doing many of the ideas mentioned. Here’s some of the ways us Smiths are celebrating Earth Day this week- and most weeks!

1. Go “meatless” once a week. You guys, this is so simple. There are so many yummy meatless meals out there and if we all participated in this, it would make such a difference for our planet. For instance, did you know…?!

2. Shop for local produce and ingredients. We’re so lucky to have lived in places with great access to local, fresh produce whenever we needed it. Our family loves to hit up Farmer’s Markets to see what looks tasty and is in season. We have a really big market that is open year round and you can really find some great deals. Plus, the kids enjoy going and you really cut down on the amount of fuel/costs needed to transport your food to you.

Our market finds this week.

3. Plant a garden. In Pennsylvania we had produce out the ying yang. There was a peach tree, pear tree, plum tree, tomatoes, green peppers, cucumbers and squash in our yard. It was awesome! I’d love to get back into that kind of gardening again, especially now that the kids are at a fun age for helping me with it. For now, we are starting with some potted herbs. I love having fresh herbs on hand for all kinds of recipes. And what better way to teach kiddos about taking care of the Earth, than by showing them how we can grow and care for our own produce.

4. And finally, my favorite way to celebrate Earth Day is to cook together! You can never underestimate the importance of teaching our kids where their food comes from and how to prepare it. Think of the impact we could make on our planet if the next generation focused on cooking and eating real food and we could reduce the amount of pre-packaged food waste that we create.

Today we used our market Asparagus and made a super simple tasty side dish. (Even Nolan ate some Asparagus!!) All we did was wash and chop our Asparagus, sauté them in some Olive Oil and butter, and then tossed them with some lemon juice and some of the Thyme and Parsley we just planted. Finally we topped it all with some shredded Parmesan cheese. So easy!

1 Year North Carolina-versary

This weekend marks one year since us Smiths moved from Lititz, Pennsylvania to North Carolina. In some ways we still miss our friends and small town that we left behind (heck, we still miss Florida too!) but in most ways, we feel like we’re finally home. This last year has seen our boys reaching new milestones- Nolan learned to walk and talk and Brady has completely blossomed into an independent pre-schooler. Our kids have gotten to experience so many new things since moving to North Carolina. They’ve explored lakes and trails, visited the mountains and beaches, and have been to tons of downtown museums and festivals. Here’s some of my favorite pictures from the last year of getting to know North Carolina.

If the weather was nice, we were at a park. Lots of biking, running, playing, and boating took place this year, and we’ve only begun to scratch the surface of the amount of cool parks to check out.

We’ve tried to spend a lot of time enjoying all of the lakes near us as well with picnics, swimming, fishing and boat rides.

We’ve celebrated all of our birthdays since moving to North Carolina…Brady turned 3 last summer and Nolan turned 2 this Spring. Side note: This summer Brady will celebrate his 4th birthday in his 4th house. Time to stay put for a while!

We’ve really gotten to enjoy all 4 seasons. In fact, that might be my favorite thing about North Carolina. You get a taste of each season without ever feeling tired of any one type of weather. Just when the Summer heat got annoying, Fall gave us a welcomed break. When Winter got on my last nerve, Spring began to give us some relief. It’s just gorgeous here.

While we know the state of North Carolina has a lot to offer, we’re especially happy that we chose Raleigh as our city. We’ve had so much fun checking out the museums, shops, parks, restaurants, festivals and Farmer’s Markets downtown.

It has been a fun year of exploring this area, and now that we have built our forever home, we are really looking forward to seeing what else there is to discover. I’ll always miss seeing Amish buggies in PA, and I’ll never be as close to the beach as I was in FL, but, despite the fact that NC has the worst Spring pollen I’ve ever encountered, it really feels like the perfect fit for our family. We’re looking forward to seeing what else this area has to offer and making lots more memories!

In some ways it’s hard to believe it has already been 2 years since Nolan came bursting onto the scene of life in an oh-so-dramatic fashion. In other ways, it’s impossible to think that life ever existed without his larger than life personality.

It’s been 2 years of laughter, exhaustion, questioning our sanity, and thanking God every day for the gift that is Nolan. He continues to keep us on our toes and crack us up with his mood swings, catch phrases, and ridiculous obsessions.  He is also just about the easiest thing in the world to fall in love with thanks to his cuddly, smiley, thumb-sucking cuteness.

While I admittedly never thought I could love anything as much as I loved Brady, (even while pregnant with Nolan!) I am forever in awe of how much my littlest man changed everything I knew about love. Like, heart exploding, best thing in the world, how did we ever live without you, love. Brady taught me what real love was, and Nolan taught me the infinite capacity that my heart could love.

While it is bittersweet to think that our baby is no longer a baby, I’m too excited to see what life has in store for our sweet Rolie Nolie to ever wish for time stop. Even the surgeon who delivered him said that he must be destined for great things in life and was definitely sent to us for a reason. (Insert proud mom face.)

So this Easter, as our little Bubba turns 2, we’ll be farther away from all the sleepless nights of his infancy and one step closer to the sleepless nights that he’ll undoubtedly cause us in his teen years. He’ll be going full throttle (as usual) and we’ll be there just trying to keep up with him (as usual.) His big brother will be desperately pleading with him to “follow the rules”  and “stop stealing my food!” all while laughing throughout the house, chasing each other or wrestling on the bed. He’ll be the maniac that he is and then stop for a quick snuggle and thumb suck (all while pulling my hair, no doubt.) We’ll soak up the good and try to get through the terrible 2’s with the mindset that this is all going by much too quickly.

Dinosaur Cupcakes- Kids Cook Monday

The other day we had a boring, rainy day in Raleigh. Chris was out of town and it was too wet and cool outside to do anything fun outdoors with the boys. In other words, it was the perfect day to bake something. I told Brady we should bake something fun and asked him if he had any suggestions. He quickly replied, “A Dinosaur Cake!” While I was not exactly sure how to pull that off, I knew we had to make it work because he was so proud of his idea.

This cooking session with B-Man was not necessarily about trying a fancy new recipe or pulling off some elaborate Pinterest project- but more about getting messy in the kitchen and having some fun. We didn’t pay attention to swapping out ingredients for healthier alternatives, in fact we used a boxed cake mix we had in the pantry. We indulged in sugar and fat and loved every minute of it. No regrets.

First, we made a list of the steps for making some really cool dinosaur cupcakes. We got out all of our ingredients and got to work.

We used a boxed cake mix (watermelon flavor!) for our cupcakes. Actually, we used half of a package of cake mix because we really didn’t need that many cupcakes. We added 1 egg, 1 cup of water, and 3/4 cup oil. Brady helped crack the egg and stir up the batter. We put our cupcakes in the oven and got to work on our homemade frosting.

I loved this time in the kitchen with my Brady-Boo. He was so involved and so happy to be making his “vision” come to life! Also, despite the fact that he is not usually a dessert loving kiddo, he ate every bit of one of these cupcakes. He must’ve tasted the love in them!

St. Patrick’s Day- Kids Cook Monday

We love to celebrate any and all holidays around here. An excuse to give a gift, decorate, or make a special meal- and we’re on it! For Kids Cook Monday we decided to start celebrating St. Patrick’s Day with some green food. Last year we attempted green smoothies and, while they were delicious, they weren’t, um, green. This year we were determined to have GREEN smoothies. And we got our wish! We also made some cute little shamrock quesadillas to go with our smoothies.

Green Smoothie Ingredients

1 banana
2 kiwis
1 bag frozen peaches
1 container flavored Greek yogurt
about 1/2 cup of Orange Juice
about 3/4 bag of spinach leaves

Brady enjoyed helping me pick out green ingredients for our smoothie at the grocery store. He even chose key lime yogurt because of the green container. He was also excited to try kiwi- which he described as green strawberries with lots of seeds. Sounds about right to me.

We tossed everything in the blender (tasting each item along the way.)

Nolan did the honors of pushing the blender buttons. He’s come a long way from being terrified of it and running away screaming.

Here’s how our smoothie turned out. Super green!!! This batch made enough for me and the boys to each have a very big glass. Nolan finished his and then asked to finish mine. That’s a big deal because he is not an easy kid to get healthy food into.

And because we couldn’t just eat smoothies for dinner, we made some fun cheese quesadillas using Spinach wraps and a shamrock cookie cutter.

These took just a few minutes to cut the shapes out and cook up in a pan.

Helpful hint: these were much easier to cut out when warmed up for about 15 seconds.

We served them with some bright green guacamole and felt super festive!

Dr. Seuss Day- Kids Cook Monday

Happy Birthday Dr. Seuss! On March 2, people across the country come together to celebrate “Read Across America Day” in honor of Dr. Seuss. This is a day to not only recognize one of our most amazing authors, but also a great opportunity to for teachers, students, parents and children to come together to read and take part in literacy related activities. I always loved celebrating this day with my students when I was teaching, and now it is a day I look forward to enjoying with my own kiddos as a stay at home mom.

This year Dr. Seuss’s birthday falls on a Monday, so we made some tasty treats for “Kids Cook Monday” to go along with some of our favorite Dr. Seuss books.

We started by reading the most classic Dr. Seuss book, The Cat in the Hat. It’s funny. It’s silly. And, it’s always a crowd pleaser. We made some easy little fruit kabobs to go along with our lunch and story.

Then we read my favorite Dr. Seuss book, Horton Hatches the Egg. It’s the sweetest story about an elephant who promises to take care of an egg and goes through terrible circumstances but never leaves the egg. I just adore Horton’s selflessness and love. I always loved reading this book to my first graders and will never forget reading it to my Brady when he was just a tiny baby. Seriously, my favorite.

We made these cute little haystacks that look like a bird’s nest with blueberries to represent the egg that Horton was protecting. These are the easiest and tastiest treats.

Nest and Egg Ingredients

1

1 cup Butterscotch Chips
1/2 cup Peanut Butter
2 cups Chow Mein Noodles
1 cup of blueberries

Here’s how we made our nests…

Melt the peanut butter and butterscotch chips together in the microwave. (About 1 minute)

Stir the mixture until smooth.

Add the chow Mein noodles.

Stir until all the chow mein is coated with the peanut butter mixture.

Scoop spoonfuls of the chow mein mixture onto a greased cookie sheet.

Add blueberries to the tops and put into the refrigerator for at least a half hour.

While the nests are cooling and hardening in the fridge, let your littlest helper lick the bowl.

These little guys are sweet, salty, crunchy and the blueberries are surprisingly necessary!
