Homemade Chips and Guacamole- Kids Cook Monday

wpid-2015-02-02-13.43.33.jpg.jpeg

We love guacamole around here- especially Brady and Nolan! So, you can understand why I was so inspired by this blog post from Teeny Tiny Foodie…

Let’s Make Guacamole: Toddler Recipe

Not only is guacamole delicious, but it’s super easy and fun to make. And with these easy to follow instruction sheets, they’re perfect for the littlest of chefs.

Guacamole GuacamoleInstructions

I have to admit, the teacher in me was really excited about these. I can definitely see a fun Science or Writing lesson that could happen with these on Cinco de Mayo!

I knew I wanted to try this guacamole recipe with Brady, but we made a bigger batch because, well, Nolan eats a lot.

1

We gathered all our ingredients and got to chopping. We ended up using 2 avocados, the juice of 1 lime, 1 tomato, a handful of chopped cilantro, 2 cloves of garlic and about 1/3 of a white onion.

8

Brady felt so big following the recipe instructions on the I-Pad and his favorite part was definitely squeezing the good stuff out of the avocados!

wpid-2015-02-02-13.36.30.jpg.jpeg

We also made some homemade corn chips today to go with our guacamole. This was fascinating for B. “Wait. Chips don’t always come from a bag?!” Here’s how we made our baked corn chips.

Baked Corn Chips

Ingredients

Corn Tortillas
Olive Oil
Sea Salt

2

Here’s how we made our baked chips. So much easier than you would think!

3

First we brushed each tortilla with a small amount of olive oil on each side.

4

Then we stacked our tortillas (we had 5) and sliced them up with a pizza cutter.

5

Then we spread the chips out into an even layer on a baking sheet.

6

We liberally sprinkled the sea salt on the chips.

7

Then we put the chips in the oven for about 15-20 minutes at 400 degrees. (Until they were crispy and golden brown.)

wpid-2015-02-02-13.39.15.jpg.jpeg

There ya have it- A healthy snack that was easy and fun to make! (And maybe a little learning took place along the way!)

wpid-20150202_123311.jpg wpid-20150202_123346.jpg

Full disclosure… the chips were a hit, but Brady definitely asked me for a spoon at one point. Apparently, it’s now socially acceptable to just eat guacamole straight from the bowl!

Merry ChristSMITH! {December Shenanigans}

wpid-2014-12-25-13.46.37.jpg.jpeg

December has been a quick and busy month. We kicked it off with some Christmas decorating and tree trimming. Our tree this year was less than stellar, but it got the job done. While we didn’t put out all of our ornaments or decorations because of our impending move, we did just enough to make it feel festive. Plus, it just doesn’t feel like Christmas without a tree filling the house with that awesome smell and glowing lights!

wpid-20141224_211521.jpg

We had a 9 day trip to Savannah and then Daytona (Chris went to Clearwater for a work trip) in the beginning of December. It seemed like a good idea (before we got our December 26 closing date). Even though it was right in the middle of Christmas season and our big move, we had some nice visiting time with my dad and step-mom and then my mom and Grandma in Daytona. The kids loved all the time with their grandparents.

One of my favorite memories from last December was our advent calendar. Each day was filled with a fun activity or treat to experience with Brady. This year we did something similar, but we wanted the focus to be more on the act of giving and doing for others (with some fun stuff for the boys mixed in.) Here’s some of our activities we did…

wpid-20141215_144447.jpg

Making cards and giving candy to the kids in Brady’s class.

Surprising the boys with their train track around the tree one morning.

Eating treats and watching a Christmas movie.

wpid-20141217_132950.jpg wpid-20141217_132753.jpg

Visiting with our elderly neighbors and bringing them a Christmas present.

Breakfast for Dinner!

wpid-20141224_155538.jpg wpid-20141224_183323.jpg

Baking cookies for Santa (frosting/sprinkles for Brady and Nolan!)

Some of our other activities included cleaning out our old toys and giving them away, putting a surprise present in the mailbox for the mailman, looking at Christmas lights, and surprising Brady’s teacher with her favorite coffee one day. I hope these are traditions we continue as it was such a joy watching the boys experience the act of giving and getting to spoil them a little along the way.

While much of the month was consumed with thoughts of our new house and tons of to-do lists, we appreciated any small moments where we got to slow down and enjoy Christmas, our boys, and our new hometown. I loved getting an afternoon to myself to do some exploring and shopping downtown.

wpid-2014-12-21-15.11.41.jpg.jpeg

Nothing like walking around downtown on a chilly day! (especially if you have hot coffee in hand, like I did!)

I also loved baking cupcakes and getting to go to Brady’s class celebration for Jesus’s birthday.

wpid-20141218_120105.jpg

How cute are these kiddos?!

But, admittedly, lots of adult beverages were consumed after bedtime this month to help keep our sanity.

wpid-20141222_195136.jpg

Even though adding a big trip and a big move to an already busy month at times made us a little, cray cray…

wpid-20141223_120526.jpg wpid-20141219_110520.jpg

We are abundantly aware of the many, many blessings God has bestowed upon us. We are constantly in awe of all that He has provided for us and give thanks for the good, the bad, and the crazy every day!

wpid-2014-12-25-13.44.43.jpg.jpeg

We spent our Christmas with Grandpa and Nana, opening gifts, eating, and getting ready for our big move.

We hope everyone had a Merry Christmas and will have a blessed 2015!

Pirate Party- Arrghh!!

Recently, a sweet little girl I know, named Ryley, turned 4. Her momma, Darrah, and I became friends in grad school, and have remained close since. It’s hard to believe we both have little ones now, let alone little ones who have turned 4!!

wpid-img_217665394416171.jpeg

Throwback! This was baby Brady and Ry right before her 1st birthday. Where has the time gone?!

Darrah had a fantastic Pirate themed party planned for Ry’s big day, and asked if Chris and I could help her come up with some printables for the food and décor. Of course we obliged, and her party turned out so cute! Here’s some pictures from the party.

LOVE this Fleet of Cupcakes!

Darrah’s creativity teamed up with a few of these Pirate printables, made for an amazing party that any 4 year old would love to have! Here’s the links to the printables that we designed with Ry’s party in mind, but would be perfect for any Pirate themed event. There are game titles, thank you notes, and food labels. Just click on the link below the image you want to download and print!

Halloween- Smith Style

Halloween has never been my favorite holiday. It’s always been OK, but now that I have young kiddos, it’s a whole new ballgame. We had such a blast getting ready for and then celebrating Halloween this year. Our boys are at such a fun age and really enjoyed every bit of the festivities. Brady was obsessed with planning, creating, and wearing his costume that he thought up. And Nolan? Well, he was pretty much made for Halloween. Socializing with strangers, eating junk food, and being told how cute you look… that’s basically Nolan’s dream come true.

This year we let the boys pick out small pumpkins at the Farmer’s Market and they each got to paint them. Nolan mighta eaten a little paint. And of course, Brady meticulously painted every inch of his pumpkin as slowly and carefully as possible.

Nolan’s on the left, Brady’s on the right.

For Halloween food, I turned to Pinterest. So many Pinterest ideas seem silly and over the top, but I can honestly say that our boys got a kick out of all the special food that we made. For once, we nailed a Pinterest inspired idea!

PB&J Spider Sandwiches

15

Mummy Hot Dogs

16

Jack-O-Lantern Ranch Bean Dip

14

Aaanndd… Fizzy Worm Juice (which was not Vodka and Sprite for us adults, if that’s what you were thinking. Ahem.)

As for costumes, this year Brady chose what he and Nolan would be. He’s been super into his Curious George books lately, so he decided that he wanted to be “The Man with the Yellow Hat” and Nolan should be Curious George. This totally worked for me because I had a monkey costume that I bought from Target on clearance at the end of the season last year, so Nolan was taken care of. However, Brady’s costume was a different story. Turns out, “The Man with the Yellow Hat” is not a very common pre-schooler costume, so we had to do some improvising. We found his shirt at the mall, the pants on Amazon, and well, yours truly made the hat. Thank you, glue gun!

6

Ahhh the cuteness!

7 8

We took the boys trick-or-treating at the park by our house for their “Trick or Treat the Trails” event. They had a blast and I was so relieved to see that people actually knew what the boys were dressed as. Again, thank you, glue gun!

9

Once Nolan realized that people were just giving him candy, he was stoked! He tried eating it wrapper and all!

10 11

12

Brady would not let Chris and I go without costumes, so last minute we threw together some cowboy costumes. When a 3 year old tells you to wear a costume, you do it.

13

We ended the evening by trick-or-treating with our neighbors in our neighborhood. After we put the boys to bed, Chris and I sat outside, gave out more candy, and enjoyed some more “Worm Juice.”

It was an awesome Halloween! We’ll probably need to detox tomorrow from all the sugar and excitement, but it was worth it. I’ll leave you with another favorite Halloween memory…Nolan’s first time listening to “Thriller.” HAPPY HALLOWEEN!

“Perks” of Being a Mom

Mother’s Day is a perfect time to reflect on the hard work and love that goes into being a mom. I am lucky to not only have a selfless, strong, amazing mom, but also aunts,a grandma, and step-mom who have all been a blessing in my life. All of these women have had an impact on the kind of person I want to be and the way I want to raise my boys.

With that being said, it’s important to note that being a mom is not always a fun, easy gig. It can be gut wrenching, stressful, and all– consuming. To know that every move you make impacts the life of someone else, is quite humbling. While the love between a mom and her kids is the absolute greatest reward for all that hard work, there’s some parts to being a mom that are not always glamorous. I thought I’d take a moment to list a few of the ways being a mom has changed my life- and perhaps find the good in those “not so glamorous” moments.

1.Never will I have to worry about getting lonely while peeing. Even when the bathroom door is shut, I can count on at least one little hand creeping under it to track me down.

2. I can have all the kid food leftovers I want. In between wiping up spaghetti sauce spills and crushed Cheerios, I am totally swiping bites of grilled cheese sandwiches, pizza and Mac-n-Cheese. And let’s not forget about the free desserts that come with kids meals…

3. It is completely acceptable to bust out in a Disney song, watch The Little Mermaid, and plan Disney vacations. I play it off like it’s for the kids, but who am I kidding? I freakin’ love everything Disney!

4. My body automatically wakes up at 6:30 AM every day. Nolan is my early bird and rarely sleeps past 7. That means, whether I like it or not, I get to see the beginning of The Today Show every.single.day.

5. My days are spent cleaning up messes, reading children’s books, singing kids’ songs, tripping over crayons and Legos, hearing my name called 177 times an hour, and repeating myself until I’m blue in the face. This seems exhausting until I remind myself that before I had kids I was a first grade teacher and my days consisted of almost the exact same things! Except now I get to do it without the hassle of principal observations, complaining parents, and lesson plans. (Or a paycheck, but I digress…)

Being a mom has also made me appreciate the little things in life so much; drinking an entire cup of coffee while it’s still hot, having one too many glasses of wine and being able to sleep in the morning after, 20 minutes of quiet time to read, a solo trip to Target, an uninterrupted conversation with my husband, eating as slow as I want- using both hands, and starting a project and finishing it within the same day. Some of these things are unlikely to happen while my boys are still young, but that’s ok. I’m sure someday when I’m able to indulge in these little treasures, I’ll be longing for the days of rocking Nolan to sleep at night, getting blue Icee’s at Target to appease Brady while I shop like a madwoman, sharing chicken nuggets with the boys, wiping sticky handprints off my windows, pushing the swings “higher!”, “faster!”, “more!”, having to sneak out of the house to avoid sad faces looking out the windows if I dare go somewhere alone, and reading just “one more” book at bedtime.

I can safely say that being a mom is more challenging than I could have ever imagined, but the truth is, it’s a job that I am blessed to have and am thankful for every.single.day.

Mexican Popcorn- Kids Cook Monday!

Happy Cinco de Mayo! Or…Happy “excuse to eat as much Mexican food as possible” Day! The hubby lived in Mexico for several years, so by proxy, we’re totally an authentic Mexican family. Right?! Anyways, we do cook our share of Mexican food around here, but I wanted to switch it up today.

While we did go to a Mexican restaurant today for lunch, I thought it would be fun to do a different kind of Mexican themed snack for after Brady’s nap. Brady was (ever so nonchalantly) requesting popcorn today. He brought it up in the car, and then again in Target, so I promised him that would be our after-nap snack.

Mexican Popcorn

Ingredients:

Popcorn

1/2 cup Popcorn Kernels
Tbsp. Vegetable Oil

“Fancy Butter”

1/3  Stick of Butter (melted)
the juice of one lime
about a tbsp. of chopped cilantro

Seasonings

1/2 tsp. cumin
1/4 tsp. chili powder
1/2 tsp. salt

Tbsp. parmesean cheese to sprinkle on top

DSC_0457

Stove top popcorn is so much fun to make! The anticipation of the first kernel popping is pretty exciting, like for me, as an adult. So, I figured Brady would love it too. And sure enough he did! We popped our popcorn according to the kernel directions and then added our fun, Mexican themed toppings. You could also make this with microwave popcorn, it’s just not as fun! For toppings we used a combo of fancy butter, seasonings, and cheese. First we poured our “fancy butter” (a combo of melted butter, lime juice and cilantro) on the hot popcorn and shook it up in a big bowl with the lid on. Then we put our seasonings on the popcorn, put the lid back on, and shook it up some more. Finally, we topped it with a little bit of parmesan cheese.

DSC_0461

Pickin’ cilantro leaves off and squeezin’ limes!

DSC_0465

Shake, shake, shake! That bowl is as big as him!

It was muy deliciosa! Que Bueno! And, as an added bonus, Brady got to use some of the cilantro we’ve been growing from our garden. Love, love, love when things work out like that!

DSC_0466

Yummy, buttery, salty, tangy, popcorn! Sidenote: I used tri-color kernels so my popcorn has an even cooler look to it (in my opinion). Just know those pieces are not burned pieces 🙂
