Fall in NC!

Oh hey, blog. Nice to see you again. No seriously, it’s been forever since I’ve written a post. Time to get back at it!

I thought I’d do a quick re-cap of some of our Fall shenanigans. There’s been lots of football watching, leaf gawking, travel, and enjoying cooler temps.

We try to get in the Fall spirit with a little bit of decorating. Some pumpkins, leaves, and of course a Gator shrine help us enjoy the season a little more.

We’ve also been busy with school and soccer the last couple of months. Brady has loved school from day one, where Nolan took some getting used to. He liked the idea of school, but did NOT like mommy leaving. He has finally come around to the idea and now looks forward to it as much as Brady.

Brady had his first school field trip this Fall- a trip to a pumpkin patch complete with a hayride, goats, and a bounce house.

We recently took a trip to Blowing Rock, NC with my Aunt Claudia. She got the best condo for all of us right in Downtown. We were walking distance from restaurants, bars, shops, and a park. The leaves were spectacular along the parkway, the boys enjoyed going back to Tweetsie Railroad, and we had fun exploring Downtown Boone. We even got to check out some cool views of Appalachian State and are highly considering brainwashing our boys to make that their back up school (if they don’t get into UF of course!)

Halloween was super fun this year. Both boys really got into it and were pretty much the cutest dinosaurs ever. They got to trick or treat twice. Once at the park near our house and then again in our neighborhood. They enjoyed the candy, but really liked just hanging out in our driveway with a fire pit and our neighbors. (And the T.V. Chris set up so we could watch college football, of course.)

So that’s our Fall so far. We’re looking forward to our first Thanksgiving in our new home and enjoying the last little bit of color on the trees. The days of playing outside without sweating or needing puffy jackets are numbered so we are trying to make the most of them! Happy Fall, y’all!

“Healthy” 7 Layer Dip- Kids Cook Monday (Football Edition!)

One of our favorite things to do on the weekends is watch football. Our kiddos cheer for our teams and clueless-ly scream, “Touchdown!” whenever we get excited about a play. This weekend was full of NFL playoff games (sadly, the Cowboys were robbed of their win) and tonight is the college football Championship game. We’re sad to see football end this year, but happy to indulge in some football-watchin’ food!

One of our favorite party foods is 7 Layer Dip (or Taco Dip). We have it at most of our family gatherings, but I thought it would be fun to do a little makeover with a few tweaks for a slightly healthier version. We made this up yesterday for a meet and greet with our new neighbors to watch the Broncos/Colts game and are enjoying it again tonight for the Ohio State/Oregon Championship game.

Here’s what went into our new and improved 7 Layer Dip…

Ingredients

1 Can Refried Black Beans
1 Container Guacamole
1 cup Plain Greek Yogurt
1 can sliced black olives
About half a jar chunky salsa
3 stalks of chopped green onion
1 brick of Colby-Jack cheese, shredded
Chips for Dipping

We swapped out the refried pinto beans for refried black beans, and the sour cream for non-fat Plain Greek Yogurt. I also switched up my regular onion for green onion (just for a change!) and regular tomatoes for salsa (just for a little more flavor!) This was an easy dish to assemble. Here’s how we layered ours…

Beans, guac, Greek Yogurt, Black olives, salsa, green onions, and cheese on top!

There were lots of kid helping opportunities for this dip- Spreading the beans on the bottom of the dish, grating the cheese, opening and draining the olives, sprinkling the cheese on top, and Brady’s favorite…cutting the green onions with big scissors!

Even though this dip did not bring the Cowboys much luck, it did help Chris drown his sorrows…

And Brady is pretty much a fan of anything with guacamole and olives. He’d root for that team all day long!

And for what it’s worth, you could really healthy up this football food by eating it with Baked Tortilla chips (And the leftovers also make a mean taco salad!)

It’s Gameday, Y’all! {Printable}

Soooo beyond excited for the upcoming holiday weekend. Not Labor Day (I mean, that’s cool too) but, the start of college football! It’s our most favorite time of year! College football means  watching “Gameday” on ESPN all morning, eating delicious food, drinking beer, wearing your school’s colors, singing your Alma Mater’s fight song, brainwashing your kids, and watching football ALL day! We love the Gators around here, but enjoy watching all the games, especially the SEC teams.

I wanted a printable that summed up how we feel on Saturday mornings during college football season, and I thought I’d share what we came up with.

Obviously my favorite version is the orange and blue one, but we made it in several colors to accommodate people who may be fans of other (not as awesome) schools.

These are mostly SEC teams, but could work for several other schools. Click on the link below the colors that suit your team, download, and print! (Some colors may show up different on different screens, but they should print right!)
